A Recipe for a Cinco de Mayo Fiesta

May 5th may celebrate Mexico’s victory over France in the 1862 Battle of Puebla, but it’s also a great excuse to serve up a sampling of everyone’s favorite dishes from our neighbor to the south. Whether you want to set up the best-ever taco bar or create the perfect margarita, go loco in your Bay Meadows’ casa and celebrate this Cinco de Mayo with our favorite recipes.

Dip It: Celebrate in style with scrumptious dipping appetizers like a tangy, zesty Tomatillo Salsa Verde, a chunky Guacamole with Cumin or Kicked-up Guacamole and a fresh Peach Salsa. These starters full of flavor will kick off your evening festivities with a bang.

Quinoa Black Bean Tacos: These quick and easy tacos are loaded with so much flavor from the abundance of beans and sweet corn kernels – even meat eaters will love them! Topped with avocado and a dollop of sour cream, these will be a hit of the evening.

Whether you are in the mood for Breakfast Tacos, Grilled Tacos, or Korean BBQ Street Tacos, this is a great resource of recipes suited to your taste!

Self-Serve Taco Bar: Build a supreme taco tailored to favorite Mexican toppings, and try a sweet twist on the self-serve menu by hosting a Churro bar with dipping sauces and toppings.

Carne Asada Fries: This palate pleasing dish of tasty fries topped with carne asada, sour cream, guacamole and pico de gallo make for a unique dinner perfect for celebrating Cinco de Mayo. Enjoy!

Mexican Corn on the Cob: This is the best way to serve corn! Grill, smother with cheese mixture containing: mayo, sour cream, cheese, chili powder, garlic, and cilantro, sprinkle with extra cheese and chili powder and serve immediately with lime wedges. Yum…

Cinco de Mayo wouldn’t be the same without some amazing sips. Try one of these cocktail recipes including the spicy Amante Picante Margarita that combines jalapeño, cilantro and cucumber, the light, summery Mint Lime Cooler cilantro-spiked Cilantro Cooler or a sweet, milky Horchata Milk Shake.

As you indulge in delicious fare on the 5th of May, learn about the significance of Cinco de Mayo and take the time to appreciate Mexican culture. Put up Mexican-style decorations, make a piñata or maracas using the colors of the Mexican flag – green, white and red. Throw on a sombrero and put on some Mexican music and dance, invite the neighbors + friends to join (virtually) and have fun!
