#VegOut and watch for these veggies this spring!
Sweet Peppers: Green peppers are actually the unripe form of the pepper. The colored sweeter varieties come in shades of yellow, orange, red, purple, and rainbow. Try them in everything from dips and salads to soups and stews.
Asparagus: Select bright green asparagus with closed, compact, firm tips. Avoid wilted or limp stalks, as that is a sign of age. Asparagus is packed with nutrients and easy to make ahead for a crowd.
Be sure to scoop up some Iacopi Farms English Peas, No5Kitchen in San Mateo says:
English Peas: The ultimate spring vegetable. The fresh pea is a popular culinary component in pot pies, pastas, soups, and salads. The pea can be simply boiled or steamed to bring out its sweet flavor, or eaten raw.
