What’s Cookin’ at the Market?
Chef Laura Stec returns to Farmers Market Bay Meadows this Sunday, July 29th for cooking demos. We’ll be celebrating Stone Fruits and Tomatoes! Join Chef Laura to learn how to master a Summer Market Ceviche.
Chef Laura joined us for the grand opening of the Farmers Market. Opening day was just the first of several weeks of good times and good eats for this new Market. The much-anticipated kick-off (there was a line around the corner waiting to get in!) was foggy, but folks warmed up with smiles and maybe some Blue Bottle Coffee from across the Town Square.
Crowds flocked to the many vendor booths, many equipped with their new Farmers Market Bay Meadows bag, which were given complimentary to the first 100 guests.
Also warming up the crowd with her hot cooking tips was Laura Stec, chef, educator and author of “Cool Cuisine: Taking the Bite out of Global Warming.” We were delighted to be joined by this noted culinary teacher, who presented cooking demos throughout the day.
On opening day, Chef Laura, using her method of EZ Seasoning, highlighting methods for preparing vegetables. Starting with Saluyot, a dark-green leafy vegetable, similar to chard or spinach, that is used in much Asian cuisine. The “leaves are a nutritious food source iron, calcium, vitamin A, C, E, and fiber; strong in antioxidants and used to treat inflammation.”
Chef Laura separated the leaves from the stems, composted the really hard stems, and chopped the moister stems fine, then sautéed them in olive oil and salt. Tasted like chard and spinach combined – good!
Combining the saluyot with chayote leaves in a seasonal saute, Chef Laura then mixed in an “EZ Seasoning” mixture of tahini, horseradish and dill. Chayote is “a type of squash where the fruit, leaves, stems and tubers can all be eaten … it is mild in flavor and high in Vitamin C.”
A favor with the kiddos who were observing Chef Laura was a quick daikon radish snack topped with Hummus Heaven hummus & black olives, plus sugar snap pea for garnish. As Laura noted, Daikon is “nature’s cracker.”
